Jack o Lantern Quesadilla Recipe for Kids

My kids loved these fun quesadillas and the best part is, they are so easy to make!

You just need some mini tortillas, fresh grated cheddar cheese, a pumpkin shaped cookie cutter, a knife and of course, a griddle or way to heat these tasty fall meals up.

Since my kids are picky we only used cheese as the filling but you can certainly add hot sauce, vegetables, peppers or anything else you want. Oh and the dippings are endless – guacamole, salsa, and even sour cream. YUM!

Ingredients

  • Small (mini) tortillas
  • Shredded cheddar cheese
  • Pumpkin cookie cutter
  • Knife
  • Any other mix-ins – cooked chicken, ground beef, fajita meat or quesadilla veggies
  • Salsa or other dips for your finished quesadilla

Directions to Make Jack o Lantern Quesadilla

Step 1

Start by using your pumpkin cookie cutter to cut pumpkin shapes out of the tortillas. Remember that you need two tortillas for each quesadilla.

Step 2

On one of the two tortillas cut out a jack ‘o lantern face of your choosing with a knife (use a smaller knife to make cutting the detail easier).

We had fun with these and made a few different faces as you can see below.

Step 3

Now, place the tortilla without the face onto a hot pan or grill. Place desired amount of cheese and let it melt for a few minutes.

Step 4

While the cheese melts, warm up the tortilla with the face on same pan or grill but not on top of the cheese and other tortilla. 

Step 5

Once the cheese is melted and the tortilla with face is warm, place tortilla with face on top of tortilla with cheese.

Remove from pan and enjoy!
